18 Mile Bakery takes its name from 18 Mile Creek, the waterway winding through Hamburg, NY — a nod to the community that inspired everything we do.
Owner and baker Scott Koepka has spent his life perfecting his craft. He began baking in high school at Great Harvest Bread Co. right here in Hamburg, before pursuing his passion at culinary school in Manhattan, studying international bread baking and mastering the art of French lamination.

Every bread begins with our live sourdough starter — naturally leavened, slow-fermented, and full of complex flavor that only time can build. No shortcuts. No commercial yeast.
We rotate through 18 sourdough recipes because baking should never be boring. From marbled rye to potato cheddar — each loaf is a new expression of what wheat can become.
Named after 18 Mile Creek, we are Hamburg through and through. Our baker grew up here, trained across the world, and came home to give this community something truly special.
Scott trained in French bakeries in New York City — his lamination technique shows in every croissant: hundreds of flaky layers, a deep golden color, and a shatter on the first bite.
We bake each morning before we open. What you pick up at 8 AM came out of the oven hours before. Nothing is reheated, nothing is frozen — just fresh, every single day.
We are a small operation baking in real quantities. We'd rather sell out than compromise quality with overproduction. Order online early — your favorites are worth it.

Our live sourdough culture is fed every day. This wild-fermented starter is the soul of every bread we bake — no commercial yeast, ever.
Flour, water, and culture are combined by hand. We let the dough rest and develop naturally — gluten forms, flavors begin to deepen.
Shaped loaves rest overnight in the cold. This slow proof develops the complex, tangy flavor that makes sourdough worth the wait.
Every morning before we open, the oven fires up. When you arrive at 8 AM, your bread came out of that oven just hours before.

We are open Wednesday through Sunday, 8:00 AM – 3:00 PM. We are closed Monday and Tuesday. Hours may vary around holidays — follow us on Instagram @18milebakery for the latest updates.
We are currently a carryout-only bakery. We do not have indoor or outdoor seating at this time. It's the perfect spot to grab a box of croissants and head to Hamburg's Memorial Park nearby!

Scott Koepka is the sole baker at 18 Mile Bakery. Everything is made entirely from scratch each morning — the sourdough is naturally leavened from our live starter, the croissants are hand-laminated using French technique, and nothing is pre-made, frozen, or reheated. When it's gone, it's gone.
